3 One-Pot Pasta Recipes For Super Quick Mid-Week Meals

We have been trialling and testing one-pot pasta recipes in the Kitchenware Collective kitchen this week. And wow, we have to say…it will change your life!

One-pot pasta dishes are:

  • Super quick
  • Adjustable to whatever ingredients you have left in the fridge or pantry
  • Simple
  • With only 1 pot to clean (because we hate doing the dishes!)

One-Pot Mediterranean Fettuccine

  • Difficulty: easy

Ingredients
350g fettuccine pasta
250g cherry tomatoes, sliced halfways
1/2 spanish onion, diced
1/4 cup parsley, chopped
200g olives, split
4 cups water
2 cloves of garlic
salt & pepper to taste

Method
Put all ingredients into the casserole dish. Cook for 15 minutes until pasta is al dente and all of the water has evaporated. Ensure you stir pasta regularly with tongs to keep it from sticking to the pan.

One-Pot Zesty Shrimp Spaghetti

  • Difficulty: easy

Ingredients
350g spaghetti pasta
250g prawns/shrimp
1/2 spanish onion, diced
1/2 kale bunch, chopped
1/2 lemon, juiced
200g olives, split
4 cups water
2 cloves of garlic
salt & pepper to taste
lemon wedges for garnish

Method
Put all ingredients into the casserole dish except for the prawns. Cook for 10 minutes. Add in prawns and cook for another 5 minutes until pasta is al dente and all of the water has evaporated. Ensure you stir pasta regularly with tongs to keep it from sticking to the pan.

One-Pot Mascarpone Mushroom Penne

  • Difficulty: easy

Ingredients
350g penne pasta
1 leek, chopped
1/2 bunch spring onions
2 sprigs of thyme
250g mascarpone
375g brown mushrooms
120g baby spinach
4 cups water
2 cloves of garlic
salt & pepper to taste

Method
Put all ingredients into the casserole dish except for the baby spinach. Cook for 15 minutes. Add in baby spinach and cook for another 5 minutes until pasta is al dente and all of the water has evaporated. Ensure you stir pasta regularly with tongs to keep it from sticking to the pan.
