Sarah’s Zucchini Fritters Recipe

Ingredients: Mix together 2 grated zucchinis after all liquid has been squeezed out, 1/2 cup self-raising flour, 1 egg lightly beaten and 1/2 cup grated cheddar or feta cheese.

Method: Drizzle oil in a pan and fry on medium heat until golden each side (2-3 minutes) whilst spooning 1 tablespoon of batter at a time and spreading slightly.  Season with salt and pepper.
