Dairy-Free Fresh Apple and Pear Bread

Dairy-Free Fresh Apple and Pear Bread

Makes: 1 loaf
2 cups (250g) plain flour
2 tsp bicarb soda
Pinch salt Olsson’s sea salt
115g Nuttelex
115g brown sugar CSR
2 eggs, beaten
1/2 cup Bonsoy
1 tsp ground cinnamon
2 tsp vanilla paste
2 pears copped
1 pink lady apple chopped

Preheat oven to 170 degrees C. Lightly grease a Bakemaster 13x23cm loaf tin.

In a large Mason Cash Bowl, sift together flour, baking soda, cinnamon and salt. In a separate Mason Cash Bowl, with Cuisinart Hand Mixers cream together Nuttelex and brown sugar. Stir in eggs, vanilla and chopped fruit until well blended. Add fruit mixture to flour mixture, add 1/2 cup of Bonsoy and mix until just moistened.

Pour batter into prepared tin and bake for 60 to 65 minutes, until a toothpick inserted into centre of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out on to a Bakemaster Wire Rack.
