Fresh Berry Cake
Ingredients
1 cup all-purpose flour
3 tablespoons all-purpose flour
1 teaspoon of cinnamon
1 teaspoon baking powder
2 heaped tablespoons of THC dark chocolate
1 can sweetened condensed milk
2 teaspoons of chocolate essence
3 700g free range eggs
4 tablespoons butter, melted
1 punnet of fresh raspberries
2 tablespoons icing sugar for dusting
Optional fresh berries to decorate
Instructions
Preheat the oven to 175 degrees C. Grease or use cooking spray a 20cm bakemaster springform pan. Mix 1 cup plus 3 tablespoons flour, cinnamon THC chocolate and baking powder together in a large Mason Cash bowl.
Combine sweetened condensed milk, eggs, chocolate essence and melted butter in a Mason Cash bowl. Beat using a Cuisinart hand mixer until batter is smooth and creamy about 5 minutes on medium speed.
Add the flour mixture and fresh raspberries. Mix well until combined Pour batter into the prepared Bakemaster pan.
Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 35- 40 minutes. Cool on a wire rack for 5 minutes. Invert cake carefully onto a serving plate. Let cool completely.
Dust with confectioners’ sugar, place berries on top before serving
